The principle on which the Association "Saperi e Sapori" is based is that the flavor taste, which is closely linked to the territory of which it is an expression, is firmly rooted in tradition and in culture and, therefore, must be defended and safeguarded.
The Association wants to rediscove, to disclose and to protect the flavor taste, and link it to food. In accordance with the statutory principles, the Association aims therefore to organize, join and give its support to various events (meetings, conferences, conventions, competitions, awards, exhibitions, fairs, tastings, courses) on the theme of taste and sensory analysis of food and agricultural products.
In particular, "Saperi e Sapori", intends to give space and information on these topics: · education to taste, through the sensory analysis; historical evolution of taste and its relations to eno-gastronomic culture; · health and nutritional aspects of food and consumption: economic environmental and ethical consequences related to agro-food production; · enhancement of regional food traditions; · Tecnical knowledge of the agro-environmental sector; · promotion of territory and the local traditions.
In addition, the Association sponsors the international event "PRIM'OLIO: International Days for the enhancement of the Mediterranean olive growing", "Excellens Oleum, a journalistic prize dedicated to the best extra virgin oil of Calabria", publications on the of world the olive growing (Gli Extravergini Calabresi: guida agli oli regionali di qualità - editions 2005, 2006, 2007 and 2008/2009) on nutrition (Pappamondo: l’analisi sensoriale entra in classe - Chiccolino si fa pane); courses on extra-virgin olive oil, wine, traditional bread, honey, meats, cheeses, tables olives; traditional nougat, traditional balsamic vinegar, and other foods. It is a partner in national and international events (RURAL-MED RIOM, IOC , ExpoItalia Brussels, SOL of Verona, MedOliva of Arezzo, Olio in Piazza di Reggio C., Torron&Fest of Taurianova, Great Feast of Bread of Altomonte, etc.). |
